Vegan Peppermint Hot Cocoa

Why, yes; I am posting two chocolate peppermint recipes back to back. Don’t judge me, peasants. I really just can’t get enough chocolate and peppermint these days. And really, just look at this frothy, chocolatey, pepperminty goodness…

In case the photo isn’t enough persuasion to get you to make this recipe, allow me to include the following endorsement: my designated recipe tester (aka, my best friend and roommate), has requested me to make this every day for the last three days. He even said it’s the best hot chocolate on the planet. So, there you have it. Go make this, now.

This hot cocoa is everything you could possibly want in a hot cocoa. It’s warm and creamy, it’s chocolatey, it’s rich and sweet. It’s also got a nice kick of peppermint. Top it with some vegan marshmallows and you’ve got yourself the perfect wintertime beverage. Oh, yeah.

I used a frother to make my cocoa extra frothy. This is totally optional, but I invested in this handy dandy gadget several years back and I absolutely love it. I use it all the time to make myself London Fog lattes and frothy coffee drinks at home.

Vegan Peppermint Hot Cocoa

Serves: 2
Time: 5-10 Minutes

Ingredients:
2 1/2 cups non-dairy milk (I prefer soy milk as it froths the best)
4 tablespoons Dutch Processed Cocoa (this is my favorite brand)
1/4 cup bittersweet chocolate, chopped (or use non-dairy chocolate chips)
2 teaspoons vanilla extract
1 teaspoon peppermint extract (or to taste)
1-2 tablespoons sugar or other sweetener of choice
Vegan mini marshmallows (I like Trader Joe’s brand, or Dandies)
Other optional toppings: coconut whipped cream, crushed candy canes, chocolate shavings

Directions:

  1. Heat the non-dairy milk in a small sauce pan until slightly warm. Add the cocoa, bittersweet chocolate, vanilla and peppermint extract. Whisk over medium-low heat until all ingredients are combined. Continue whisking until the mixture has warmed and the chocolate has melted. Add sugar or sweetener to taste.

  2. Serve warm in mugs, top with mini vegan marshmallows. Enjoy!
