Vegan Cranberry Bliss Bars (Starbucks Copycat)
You guys, I’m so proud of this recipe. This should come as absolutely no surprise to anyone, but I’ve absolutely nailed it. These are a total dupe for Starbucks Cranberry Bliss Bars.
I first tried these when I was working at Starbucks as a barista. They were instantly one of my favorite products. It was always such a bummer that they were only available seasonally. But… Now, thanks to me, you can make these anytime you want. And they just so happen to be totally free of animal products, too! I know, I’m just the greatest. ;)
For anyone that has not had a cranberry bliss bar before; they’re basically like a white chocolate blondie that’s studded with dried cranberries and infused with orange zest. It’s then topped with a white chocolate cream cheese frosting before being sprinkled with dried cranberries and drizzled in even more white chocolate. Yes, they’re as delicious as they sound.
Just look at that soft, chewy goodness bursting with cranberry, white chocolate and orange. Absolute perfection.
These are absolutely perfect for the holidays. You can share these with your friends, family, and coworkers; absolutely no one would be able to guess that they’re vegan.
Now, a quick note about the vegan white chocolate. I used a local brand, Whelpdale, which is absolutely fantastic. If you’re unable to find any vegan white chocolate near you, you can purchase this brand from Amazon.

Vegan Cranberry Bliss Bars
Yield: 16 Servings
1/2 cup softened vegan butter
1 cup dark brown sugar
1 1/2 teaspoons vanilla
1/4 cup plant milk
1 1/2 cups flour
1/2 teaspoon baking powder
1/2 teaspoon salt
1/2 cup chopped vegan white chocolate (or white chocolate chips)
1/2 cup dried cranberries
The zest of one orange (about 1 tablespoon)
4 tablespoons melted vegan white chocolate
4 ounces vegan cream cheese
2 tablespoons vegan butter, softened
1 teaspoon vanilla
2 cups powdered sugar (more as needed)
1/4 cup chopped dried cranberries
A few tablespoons melted vegan white chocolate for drizzling
Optional: orange zest for garnish
Preheat oven to 350 F. Line a 8x8 square baking pan with parchment paper, grease with vegan butter or non-stick baking spray.
Make the blondies: In a mixing bowl, cream the butter and brown sugar until light and fluffy. Add in the non-dairy milk and vanilla. In another bowl, whisk together the flour, baking powder and salt. Slowly add the flour mixture to the butter mixture in two additions. Mix until combined. Stir in the chopped white chocolate, cranberries, and orange zest. Evenly spread the dough in the baking pan. Bake at 350 F for 18-20 minutes. The blondie should be browned on the edges, and just slightly firm in the center. Allow to cool completely at room temperature. Refrigerate until ready to frost.
Make the frosting: In a bowl, cream together the vegan cream cheese and butter. Slowly add in the powdered sugar. Mix until fluffy and combined. Add in the white chocolate and the vanilla.
Decorate: spread the frosting over the cooled blondies. Sprinkle with chopped dried cranberries. Decorate with white chocolate drizzle. Sprinkle over more orange zest if you wish.
Chill: Chill the bars for about an hour before lifting out of the pan and slicing. Serve and enjoy!
